Freezer-Friendly Peanut Banana Snack

When it comes to packing lunch boxes for the office or kindy, all I need sometimes is a ready-made solution that is
- a finger food-friendly/ BWL-friendly food for the baby
- travels great without getting mushy
- easy to make when we run out of the freezer provision
- tastes great!
These vegan freezer-friendly peanut banana snack balls have advanced to become a constant companion on all family trips as well. Makes you feel like you’re carrying delightful non-melting ice cream in your bag.
This Peanut Butter Banana Snack recipe requires very little equipment:

Freezer-Friendly Peanut Banana Snack
Ingredients
- ½ cup creamy peanut butter
- ¼ cup flaxseed meal
- ½ cup coconut flour plus 2 tbsp
- ¼ cup melted sunflower seed butter
- 1 ripe banana
Instructions
- Place the peanut butter and sunflower seed butter in a medium bowl. Add the banana and mash it. Stir to combine.
- Add the almond flour, flaxseed meal and coconut flour. Stir to combine.
- Roll into 20-24 balls.
- Store in the refrigerator for up to 2 weeks or freeze*.
