I originally came up with these lemon sorbet energy balls while browsing the internet for baby-led weaning suitable snacks. The ones I found on www.babyledfeeding.com. I didn’t like the fact that they contain maple syrup as sweetener because I intend to feed L’Mdaddy natural stuff. Hoping she’ll learn what lemon really tastes like before she’s out and about in the world putting maple syrup on top and inside everything.

What do I say? She loved it right from the start. But then again what’s there not to love. These little lemon sorbet goodnesses contain:

  • fresh lemon
  • coconut
  • sunflower seeds

When you eat them straight from the freezer, they taste like lemon sorbet that melts in your mouth. I absolutely love them!

Lemon Sorbet Energy Balls

This Lemon Sorbet Energy Balls is a freezer-friendly delight. It makes for a nutritious snack at your desk, before hitting the gym or for your child at the park. Everyone can enjoy these sugar-free and nut-free energy balls.

Ingredients

  • 1 cup sunflower seeds
  • 1 lemon zest
  • 1 juice of lemon
  • 1 cup oats
  • ¾ cup shredded coconuts
  • 5 tbsp melted coconut oil
  • ½ tsp turmeric

Instructions

  • Place all the ingredients into a food processor and process until really fine and coming together like a dough. If it is a little dry, add some water, just one tablespoon at a time.

  • Take the mixture out, form into a ball and make approx. 12 balls (I use an ice cream spoon for this). Freeze* or place in the fridge for a couple of hours.
  •  Store in the fridge in an airtight container for 5–7 days.

Notes

 *Spread them out on a tray, freeze overnight and then transfer to a freezer-friendly bag or container.

Are you using couscous yet? It’s a real secret lifesaver when it comes to quick dishes. It’s ideal for meal prepping because you can pre-fix the majority of the salad ingredients and just prepare the couscous on the day you want to eat Kisir. So what is couscous exactly? Couscous is a coarsely ground pasta and it is made from semolina, a type of wheat. It is a very popular ingredient in Maghreb cuisine, western North Africa. You can steam couscous until it is very fluffy and light but you can also boil or let it wilt in hot water.

The couscous that you can find in your local supermarket is pre steamed and dried. That’s why it takes just a handful of minutes to prepare it at home.

Couscous is traditionally handmade, or hand rolled to be more exactly. The semolina flour is sprinkled with water and then rubbed and rolled until fine grains are created. Imagine how long it would take to hand roll a package of store bought couscous!

Ingredients

  • 1/2 cup dry couscous
  • 1 red bell pepper finely chopped
  • 1 tomato finely chopped
  • 1 tbsp red onion chopped
  • 1 cup vegetable broth
  • 2 tbsp lemon juice
  • 3 tbsp tomato paste
  • 1/6 cup olive oil extra virgin
  • 1/3 cup cilantro chopped
  • 1/3 cup parsley chopped
  • dash of pepper
  • dash of salt

Instructions

  • Bring vegetable stock to boil. Transfer the couscous to a ceramic dish or glass bowl. Then add the hot broth and stir.
  • Cover the dish for 10 minutes until the vegetable broth is fully absorbed.
  • After 10 minutes resting time, stir it with a fork breaking up any limps. Pour the olive oil in a pan and place it over medium heat until hot. Add the tomato paste.
  • Stir and fry the paste for 2 minutes. Then add the chopped onion.
  • Take the pan off the heat and let the oily paste chill for a few minutes. Add the cooked couscous to the pan. Season with pepper and salt. Stir well.
  • Meanwhile, chop parsley and cilantro and add to the pan. Add lemon juice to the couscous. Stir well.
  • Adjust seasoning to taste. Serve lukewarm or at room temperature.

No-Bake Carrot Cake Energizing Ball

These tender, naturally sweetened no-bake carrot cake energizing balls with dates, carrots, walnuts, cinnamon, and coconut flour will boost you with lots of energy.

Ingredients

  • 3/4  cup carrot peeled and finely shredded
  • cup walnuts
  • 1 cup medjool dates packed, pitted and measured after pits removed
  • 2 tsp vanilla extract
  • 1/4 tsp fine sea salt
  • 3/4 tsp ground cinnamon
  • 1 inch fresh ginger
  • 4-6 tbsp coconut flour or sub almond flour
  • 1/4 cup raisins or sub other dried fruit

Instructions

  • Grate the carrot (or use your food processor) and set
    aside.
  • To the food processor, add the pitted dates and blend until small bits remain or a ball forms. Remove from food processor and set aside. 
    To the food processor, add walnuts, vanilla, salt, and
    spices. Blend until a semi-fine meal is achieved — about 15 seconds. Then add the dates and shredded carrot back in and pulse in 1-second increments
    until a loose dough forms and the carrots are just incorporated. Be careful not
    to over-blend. You're looking for a pliable dough, not a purée.
  • Add coconut flour 2 Tbsp (18 g) at a time and pulse to
    combine. If it is not mixing, you may need to remove the lid and stir occasionally to encourage things along. You’re not looking for a paste or purée here, but a tender, crumbly dough. Once well combined, add raisins (optional) and
    pulse/stir once more to combine.
  • Scoop out 2-Tablespoon amounts using a cookie scooper,
    roll into balls with hands, and place directly onto a parchment-lined baking sheet or serving platter. Repeat until all dough is used up. If the bites are too sticky to roll, add a little more coconut or almond flour to dry the mixture out.    

Notes

Store covered in the refrigerator up to 1 week or in
the freezer up to 1 month.
