When it comes to packing lunch boxes for the office or kindy, all I need sometimes is a ready-made solution that is

  • a finger food-friendly/ BWL-friendly food for the baby
  • travels great without getting mushy
  • easy to make when we run out of the freezer provision
  • tastes great!

These vegan freezer-friendly peanut banana snack balls have advanced to become a constant companion on all family trips as well. Makes you feel like you’re carrying delightful non-melting ice cream in your bag.

Freezer-Friendly Peanut Banana Snack

Ingredients

  • ½ cup creamy peanut butter
  • ¼ cup flaxseed meal
  • ½ cup coconut flour plus 2 tbsp
  • ¼ cup melted sunflower seed butter
  • 1 ripe banana

Instructions

  • Place the peanut butter and sunflower seed butter in a medium bowl. Add the banana and mash it. Stir to combine.

  • Add the almond flour, flaxseed meal and coconut flour. Stir to combine.

  • Roll into 20-24 balls.

  • Store in the refrigerator for up to 2 weeks or freeze*.

Notes

*Spread them out on a tray, freeze overnight and then transfer to a freezer-friendly bag or container.
