Ingredients

  • 1 cup rolled oats
  • 1 cup frozen blueberries
  • 1 tbsp cashew butter
  • cup desiccated coconut plus more for coating (optional)

Instructions

  • Add oats, blueberries and cashew butter to a food processor, mix until combined: Gently add the coconut and stir to loosely combine.
  • Using and ice-cream scoop or two teaspoons and your hands form into balls. Roll in some more coconut if desired.
