Iranian Pomegranate Energy Balls
If you love reciting random facts at dinner party, here is your new favorite fruit: Pomegranate – This apple-sized, red in color antioxidant superfood is a full of fun facts. 613 to be precise. The juicy seeds are believed to be fixed at the number to exactly 613, some allow for an error of +/- 200, yet others believe that all pomegranates have the exact same number of seeds.
Truth be told, or truth not be told about the number of seeds, pomegranates are incredibly healthy. Their superfood status is well deserved thanks to polyphenols, powerful antioxidants thought to offer heart health and anti-cancer benefits. Moreover, pomegranates are a source of fibre, B vitamins, vitamin C, vitamin K and potassium.
Iranian Pomegranate Energy Balls
Ingredients
- 1 cup pitted dates
- 1 cup rolled oats
- ½ cup nut butter I used cashew butter
- ¼ cup raw cacao powder
- ⅓ cup maple syrup
- ¼ cup hemp seeds
- ½ cup pomegranate aerils
Instructions
- Add all ingredients (dates through hemp seeds) except pomegranate seeds to a food processor and pulse 5-7 times before letting the processor run.
- Process until one large energy ball forms and rolls around the blade.
- Remove ball from processor and roll into 12-16 small, bite-size energy balls. Add pomegranate seeds last.
- Move to the freezer or fridge for 15 minutes to set. This makes them easier to roll.
- Enjoy and store leftovers in refrigerator or freezer.
