Red Cabbage Slaw With Vegan Dressing

Hmmm burgers. I love making veggie burgers, but only if hubby is the one putting them on the barbecue. At the moment, it’s not quite barby season but rather cuddle-yourself-in-the-blanket-all-evening-season. So, hubby is sweet enough to be in charge of making bean patties in the frying pan. Then, all it takes to make the family happy is some burger buns and a good side salad.

And that’s when this amazingly colored red cabbage and carrot coleslaw comes in handy. Freshly shredded red cabbage paired with shredded carrots…. yum yum. For herbs, I love to go with chives (my absolute favorite!) and freshly chopped cilantro. If these two aren’t your thing, feel free to swap for whatever you like.

This red cabbage slaw is vegan and easy to whip up. Bright purple cabbage paired with healthy red carrots lightens the mood and pleases the taste buds.

Ingredients

For the Salad

  • 1 small head red cabbage shredded
  • 4 large carrots shredded
  • 1 bunch fresh chives finely chopped
  • ½ bunch fresh cilantro finely chopped, plus more for serving.

For the Dressing

  • ½ cup vegan mayonnaise
  • 2 tbsp maple syrup
  • tbsp lemon juice
  • 1 tsbp apple cider vinegar
  • ½ tsp ground black pepper
  • ¼ tsp fine sea salt

Instructions

  • Place all the salad ingredients into a large bowl and toss to combine.
  • In a small bowl whisk mayonnaise, maple syrup, lemon juice, vinegar, pepper and salt until smooth and creamy.
  • Pour dressing over the cabbage mixture and toss to combine. Taste and adjust seasoning as desired.
  • Place in the refrigerator for 15 minutes.
  • For serving, top with some more cilantro.
