Vegan Tomato Cilantro Salad
Quick Vegan Tomato Salad
Ingredients
- 4 medium plum tomatoes
- ¼ red onion sub: white onion
- 1 handful freshly chopped cilantro
- 1½ tbsp olive oil extra virgin
- 1½ tbsp balsamic vinegar
- ½ garlic clove very finely minced
- 1 pinch salt and pepper to taste
Instructions
- Add the tomatoes, onion, and fresh cilantro to a large salad bowl. Gently mix to combine.
- In a separate bowl whisk together the olive oil, balsamic vinaigrette, garlic, salt, and pepper.
- Combine the tomatoes with the vinaigrette. Allow salad to rest for 5-10 minutes at room temperature to allow flavors to develop.
- Leftovers keep in the fridge for 1 day, however best enjoyed fresh.
