Cauliflower Strawberry Smoothie
Ingredients
- 1 cup frozen or fresh strawberries greens removed
- ½ cup fresh or dried apricots pitted
- ½ cup cauliflower steamed and cooled
- ¼ cup cucumber peeled
- ¼ cup lemon juice
- 2 tbsp shredded coconut
- ½ cup water
Instructions
- Steam fresh or frozen cauliflower in a steamer over medium heat until fork-tender. Take out, plunge over a bowl of ice cubes to cool (or let sit on the counter to cool). Mash it up with a fork.
- Add all the ingredients as well as the cooled down steamed cauliflower to a high-speed blender. Blend until smooth, adding more apricots or maple syrup for sweetness. Add more water if you prefer your smoothie less creamy.
- Serve immediately. Cauliflower develops a strong smell when stored, so best enjoyed when fresh.
