White chocolate Hazelnut Energy Bites

During lockdown, I bought a huge amount of hazelnuts (and lots of other nuts and dried fruits). While some oppose of “panic buying”, I got to be honest and say I don’t care because someone living on 60m2 will not buy more than the apartment fits. And second, every trip to the store not taken is a good trip in Covid times.

Anyway, now, I do have a lot of hazelnuts even though some mean magpie figured out how to open the storage unit on the balcony and helped itself to a very generous meal. So, time to make something delicious from all the hazelnuts. Here it goes: White Chocolate Hazelnut Energy Bites.

White chocolate Hazelnut Energy Bites

Ingredients

  • 1 cup hazelnuts raw, unsalted
  • 3 tbsp date paste
  • ¼ tsp salt
  • ¼ cup ground flaxseed
  • 1 tbsp chia seeds
  • ½ cup sunflower butter melted

White Chocolate Coating

  • 3 tbsp coconut oil melted
  • ½ cup white cacao butter nibs melted // vegan

Instructions

  • Add the hazelnuts to a food processor and process until finely chopped.
  • Drizzle in the date paste and pulse to combine.
  • Add salt, ground flaxseed, melted sunflower butter and pulse to combine.
  • Once the dough is no longer crumbly and sticky to the touch, use two teaspoons to help you form balls. Set the balls on a plate lined with parchment paper and set aside.
  • For the Cacao Butter Coating, melt the coconut oil and the cacao butter nibs in a small pot over low heat, stirring constantly. Once melted, remove from heat and carefully and quickly place one ball into the mixture, spin around and place back on your plate. Repeat until all balls are coated.
