Black Bean Falafels

Ingredients

  • 2 cup black beans drained and rinsed
  • ½ cup pepita seeds
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp cayenne pepper
  • 2 tsp dried oregano
  • 2 tbsp tomato paste
  • ½ cup oats
  • 1 tbsp all-purpose flour
  • 1 lime juiced

Instructions

  • Add the oats, pepitas and spices to food processor and pulse until a fine meal is achieved.
  • To the food processor, add the drained and rinsed black beans, tomato paste, lime juice and flour and blend until all ingredients are incorporated scraping down the sides as needed.

  • Preheat oven to 350 ° F. Line a baking tray with parchment paper and set aside.
  • Remove mixture from food processor and roll into balls. I like to use an ice-cream scoop to do so.

  • Place falafel balls on parchment paper and bake for approximately 20 minutes at 350 degrees F.
