Black Bean Falafels
Ingredients
- 2 cup black beans drained and rinsed
- ½ cup pepita seeds
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp garlic powder
- ½ tsp cayenne pepper
- 2 tsp dried oregano
- 2 tbsp tomato paste
- ½ cup oats
- 1 tbsp all-purpose flour
- 1 lime juiced
Instructions
- Add the oats, pepitas and spices to food processor and pulse until a fine meal is achieved.
- To the food processor, add the drained and rinsed black beans, tomato paste, lime juice and flour and blend until all ingredients are incorporated scraping down the sides as needed.
- Preheat oven to 350 ° F. Line a baking tray with parchment paper and set aside.
- Remove mixture from food processor and roll into balls. I like to use an ice-cream scoop to do so.
- Place falafel balls on parchment paper and bake for approximately 20 minutes at 350 degrees F.
