ZOATS - Zucchini Lemon Porridge

  • 1/2 medium sized zucchini grated
  • 1/2 cup rolled oats use gluten-free if necessary
  • 1/2 cup warm water
  • 1 ripe banana
  • 4 tbsp shredded coconut
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 tbsp grated lemon peel use un-waxed organic lemon
  • pinch of salt

Instructions

  • Add warm water, banana, shredded coconuts and lemon peel and salt into a blender or food processor and blend until smooth.
  • Put rolled oats and grated zucchini into a bowl and add blender mixture.
  • Microwave on medium watt for about 3 minutes. You want the typical porridge texture. Let it sit for 2 minutes. Then stir in the lemon juice.
  • Add any toppings you like such as fresh fruit and enjoy!
