Carroats - Carrot Overnight Oats

Ingredients

Dry ingredients

  • ¾ cup rolled oats use gluten-free if necessary
  • ½ cup carrot finely grated
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground cloves
  • ¼ tsp turmeric optional

Wet ingredients

  • 1 tbsp vanilla extract
  • 1 cup unsweetened almond milk

Suggested toppings (optional)

  • 3 tbsp raisons or other dried fruit
  • 3 tbsp walnuts

Instructions

  • Mix all dry ingredients in a large bowl or in a mason jar and shake with the lid on.

  • Add wet ingredients and mix or shake again.

  • Place in the refrigerator, covered, for at least 2 hours or over night.
