Vegan Colombian Salpicón
Ingredients
- 1½ cup watermelon seedless // cubed
- 1 cup papaya cubed
- ½ cup water
- 6 cup fresh fruit such as more papaya banana, mango, pineapple
Topping
- vegan vanilla ice cream optional
Instructions
- In blender, combine watermelon, papaya, and water and blend until smooth.
- In large bowl combine diced fruit and blending mixture from step 1.
- To serve, evenly divide among glasses. If desired, top with vegan vanilla ice cream.
